Grilled Sesame-Ginger Chicken, Chocolate Banana Soft-serve, and Blog Notes

Before we get into tonight’s dinner, I just wanted to make a few blog notes.  Notes about what to expect, since I’m new and all.

1) There’s no way I’m going to be able to post 3 times a day.  Today was special, Two Healthy Plate’s very first day!  I work during the day and well, you know.  I’d much rather spend my day blogging but the truth is that we’ll all be lucky if I make a daily post.  I do promise, however, to post as much and as often as possible.  I’m really excited about keeping track of my meals and sharing new recipes!

2) Lunch plates are rare.  This week is special because I’m coming home for lunch each day.  My little sister (14 years old) is staying with us for the week so I’m having lunch at home to entertain her (and make sure she hasn’t burned the house down.)  We visited family in my hometown this past weekend and she tagged along on the way back.  We’re from a small town so she likes a vacation to “the big city” every now and then. Hah!  My trip home was to celebrate a belated father’s day….a fun weekend spent by the pool and cooking on the grill!

Begley is not very into swimming but he did love lounging on the floats!

Anyway, back to plates.   The point is that I’m usually not home for lunch so I’m eating from tupperware at work.  Plastic bowls do not make for very lovely photos but I’ll try my best at capturing a decent lunch photo.  I make no guarantees.  Unfortunately, the same can be said with breakfast because I’m often eating at my desk.

I guess that’s all…I just wanted to forewarn any new readers!

Dinner

Surprisingly tonight was not scorching hot so we opted to get in some cookout time. I can’t remember where I found this recipe but it’s the third time we’ve made it (the first time this summer).  I chose to make grilled sesame-ginger chicken because: a) it’s friendly for a picky 14 year old, b) it’s super flavorful, and c) as always, it’s really easy.

My plate was 1 piece of chicken served over 1/2 c. brown rice plus a side of broccoli that was drizzled with extra sauce and a slice of cantaloupe.  I also snacked on another slice of cantaloupe while I waited for the grill to heat.

Ingredients:

2 tbsp low-sodium soy sauce
2 tbsp honey
1 tbsp toasted sesame seeds
2 tsp minced fresh ginger
4 (4 0z) boneless, skinless chicken breast halves
Cooking spray
Sliced green onions

1. Prepare grill. 2. Combine first 4 ingredients in a small bowl, stirring with a whisk.  3. Place each chicken breast half between 2 sheets of heavy-duty plastic wrap; pound to 1/2-inch thickness using a meat mallet or small heavy skillet (this step is not so important, I didn’t do it ) 4. Place chicken on grill rack coated with cooking spray; grill 5 to 6 minutes on each side or until chicken is done, basting occasionally with sesame seed mixture. *(Note: I like to keep a small amount of sauce separate and use it to drizzle over the rice or veggies) Place on a serving platter; garnish with green onions, if desired. Serve immediately.

Dessert

I wasn’t very hungry after dinner but I promised my sister that we would try out this recipe for Chocolate Banana Soft-Serve and who am I to argue with such things?  I first saw this recipe on Healthy Hoggin’ but I’ve also seen it posted on other blogs so I’m not sure where it originated.  Wherever it came from, I’m glad I found it.  This was so good….a perfect summer night treat! I can’t believe these simple ingredients produce something so similar to soft-serve!

I mixed enough for 3 servings – bananas, cocoa powder, maple syrup, vanilla extract, and almond milk.  We loved it!  I can’t wait to try the chocolate peanut butter version next time.

We enjoyed our soft-serve over a game of Yahtzee while Begley played frisbee =)

So glad you tried the Banana Soft Serve! Isn’t it amazing how something so simple and healthy can taste so decadent?! The chocolate peanut butter version is great, too! (my husband’s favorite)

Love your blog– and I can totally relate to not posting 3 times a day. I don’t even think I have that much to say! Ha ha. :D
